Gajar Ka Halwa (Without Khoya) - Recipe | Maa Ki Pasand

Gajar ka halwa has always been and will always be a staple winter dessert in India because of the easy availability of ingredients, mouth-watering taste and is one of the easiest desserts to make (which we all can appreciate as no-one wants to be deprived of the warm blankets for too long, in this weather, anyway).

This blog will take you step by step to getting those fresh carrots taste less like a vegetable and more like the yummiest comfort food ever.

Here's what you all will need

Ingredients:

1. Carrot (1 kg)

2. Full Fat Milk/ Whole Milk (400 ml)

3. Sugar (150 gm)

4. Ghee (1 tablespoon)

5. Raisins

6. Cashew

Recipe:

1. Wash, peel and grate the carrots.

2. Now pour the milk into a pot or cooker and bring it to a boil.

3. Add the grated carrots to the milk and let it simmer on low flame. Cover it with a lid.

4. Keep stirring it often.

5. When the milk has fully evaporated, the carrots will look reduced and mushy. That means they're cooked and it's now time to add the sugar.

6. Sugar will release a lot of moisture. Keep mixing till half of the moisture gets evaporated.

7. Take the pot off the flame and add ghee to it and mix well.

8. Now add the raisins and cashews as much as you want, per your preference.

Your Gajar ka Halwa is ready to serve hot.
